Great listen. I only know Southern American cuisine from movies, I’ve never been there in real life. But through your descriptions I could almost taste the dishes, and it was a great experience. You really transported me to the South with this piece!
There's a great documentary series on Netflix called High on the Hog that traces the food connections from Africa to the United States. Definitely worth a watch to see the real history of the foods we identify as American and Southern.
Niki's is the pinnacle. I still haven't been to Eagle's Restaurant over in North Birmingham. It's gotten a few shoutouts from famous foodies, and it's on my to-be-eaten list.

There's a little meat 'n three down in Montgomery, AL called Mrs. B's Home Cooking that I happened upon last year, and oh my Lort, but they cooked their okra down to its most essential sliminess, and while I typically prefer my okra fried, this dish was so freaking downhome good!

Okra really develops a super weird texture when boiled down like that. It sure makes a nice thick gumbo, tho.

Ha! My best friend is from the South & she's a tremendous cook. Only thing I can't stand is okra. Just too slimy for this Northern gal. Fun read.
