And mine - “But then you could also end up at an Indonesian restaurant in the redlight district of Soho, where the food is more than worth the creep through the carnival of our shared maladies.” So well put. The entire read was the highlight of my morning coffee/iPad period.

the chef as magician is a beautiful image......your description of that moment when you realized you were eating something special and made eye contact with the creator of that food is my favorite part

Thank you, Will. That chef knew what he had put into his work. I can tell you his grin turned into a full smile, as I nodded with each bite. The sushi was amazing. And there wasn't another soul in that dive.
